Manti - Oriental dumplings

No, my Dear Friends, Manti is not meat dumplings, pelmenies, even not dumplings prepared in the steamer!
No, my Dear Frineds, Manti are never boiled in water!
No, my Dear Friends, Manti are not prepared with minced meat!
No, my Dear Friends, 1 onion fro 1 kg meat - that's not Manti!
No, my Dear Friends, Manti are not prepared huge with thick dough!
Manti - Mants - Oriental dumplings

Coz Manti are Manti!

So what will we need to prepare this famous oriental dish - manti?

Ingredients:
  • 300 gr meat - lamb or beef - fat, not minced, soft and fresh
  • 50 gr lamb of beef fat
  • 200 gr onion
  • 1 egg
  • 1 glass flour
  • few spoons of cold cold water
  • salt
  • black pepper
  • parsley
  • spices - zira, basil
1. We cut meat. By knife. Yes, only by knife and by hands. Without meat chopper. In very very small pieces. Do you feel the difference between perforated and pressed paste and carefully chopped by hands meat? Same fine we cut fat.

2. Not we cut onion by knife and hands. Into small small pieces. Why do we need so much onion? Because it makes manti juicy and soft, During the preparation onion will modify the structure of meat and will make it full of taste.

4. Now we should prepare usual unleavened dough - by your favourite recipe, using egg, flour, water and salt. I advice you to please dough before meat - and let it 'rest'.

5. How we will make our manti. Their form looks difficult to make, but if you once try to do it by your hands - you will see that there is nothing difficult.
Make round shape from dough (appr. 4 cm diametr). After place there spoon of meat.

6. Such way we prepare 30-50 manti  (depends on their size and wished quantity)

7. Spread some oil on the steamer. And put manti on every level with leaving some space between them.

8. Set the times of the steamer for 30 min. During this time we can prepare sauces.
I believe it is the right decision to make any yogurt sauce - with spices or garlic or lemon - depends on your wish and desire.
9. Our oriental manti are ready! Take them from steamer and sauce them with butter.

10. Serve manti with yogurt sauce and kefir/ayran.
